     Carnitas Michoacanas opened their doors earlier this year.  Carnitas Michoacanas is located at 3415 West Craig Road in North Las Vegas.  This restaurant is in a plaza by the intersection of Simmons.       The menu is extensive at Carnitas Michoacanas.  Carnitas are featured.  Pork carnitas are a popular meat for tacos, burritos, enchiladas and they are also offered as a platter.  The cuisine at Carnitas Michoacanas is old fashioned Mexican plaza street vendor style food!  Mexican street vendor style food is not pretentious or presented in a fancy way, but it is tasty and the plate is always full.        Mexican cuisine is the healthiest cuisine of them all. Plenty of raw fresh vegetables are used for Mexican food presentations and that tradition keeps Mexican food at the top of the list.  The health benefits of chile peppers is also another reason why Mexican food is number one.     After a week of cooking heavy French food and offal entrees, I needed to eat something light that had plenty of vegetables.  Chilaquiles were a perfect choice!  Chilaquiles are corn tortillas that are cut into ribbons, then simmered in salsa verde, chile colorado or a chile tomato sauce.  Chilaquiles have their origin in old Aztec cuisine.  The original Aztec enchiladas were simply corn tortillas dipped in a chile pepper sauce.  The original enchiladas and chilaquiles are similar items.     Chilaquiles are often served as breakfast with eggs as a cure for a tequila hangover.  Chilaquiles are usually served as a nice light vegetarian lunch or dinner entree.  Sour cream is a traditional garnish, but strict vegetarians can always say "Por favor!  No crema en la chilaquiles!" to the waitress when ordering.     The dining room is clean at Carnitas Michoacanas and the kitchen is open view.  Very little English is spoken at this authentic Mexican restaurant, so it helps if you can read or speak Spanish.  The service was polite and friendly.  The cook smiles when he sees customers enjoying their food.      It was late in the evening when I visited Carnitas Michoacanas, so Las Vegas Mexican radio was plying loud in the dining room.  I really get a kick out of Mexican radio!  The commercials always are crazy sounding!  Extra reverb and over modulation is the signature sound of wild Mexican radio commercials.  The loud Mexican radio music added to the Mexican plaza street vendor style atmosphere of Carnitas Michoacanas.     Bring cash, if you dine at Carnitas Michoacanas!  No credit cards are accepted.  Many Chinese, asian and latino restaurant owners do not care to participate in the plastic money system and that is okay.  Cash register restaurants were the only choice, till about 50 years ago.     I recommend Carnitas Michoacanas for people in the north end of Las Vegas city and residents of North Las Vegas!  Visitors of this end of town who are staying at one of the nearby casinos on Craig Road can easily find this restaurant.  Yum!  ...  Shawna
