Kielbossy?
     It really does not hurt to give a sandwich creation a catchy name.  Sandwiches and appetizers do tend to be given some wild sounding names.  Sandwich shops, bars and modern casual restaurants all seem to have a few menu items that have crazy names these days.  Sports bars tend to go nuts with crazy sounding menu items.  Food vendors at sporting events like barking weird sounding food names to potential customers.  Face it!  Beer chugging sports fans are nuts!  Sports fans like beer food that has crazy names.     Plain fresh kielbasa sandwiches are popular in nearly every northern city that has a population of Polish immigrants.  The Maxwell Street Polish is possibly is the most famous old fashioned fresh kielbasa Chicago sandwich of them all.  Kielbasa and sauerkraut is a Wisconsin tailgate party main staple.  Kielbasa with peppers and onions is another ball park food vendor offering that is popular.     Kielbasa is not only polish.  The word kielbasa is used to describe cured fresh sausages and cured smoked sausages throughout eastern europe and Russia.  Old fashion kielbasa is usually only seasoned with black pepper.  Paprika, nutmeg, mustard and a few other spices are used to season many varieties of kielbasa.  Fully cooked cured smoked kielbasa is what most people think of, when they hear the word kielbasa.  This style of kielbasa has an easy to recognize reddish orange color.  Smoked fully cooked kielbasa can be found at any grocery store and it is one of the most popular sausages of them all.     A kielbasa sandwich with peppers and onions is nothing new.  Even melting emmentaler cheese on this sandwich has been done a million times.  What makes this version of a kielbasa, onion pepper and cheese sandwich bossy?  Brinjal!       Brinjal is a classic Indian spicy eggplant chutney or condiment that was created to accompany one specific kind of traditional curry.  Brinjal became a popular sandwich spread in India and the middle east.  English Branston Pickle has its origins in India and the flavor is similar to Brinjal.  Brinjal is much stronger tasting that Branston Pickle and it is much thicker.  Cardamom is the key spice in brinjal, but anise, clove and allspice can also be noticed.  The rich flavor of brinjal is perfect for a smoked kielbasa sandwich.  Brinjal condiment can be found at Indian markets and middle eastern markets.     The flavor of this Kielbossy sandwich is so interesting, that craving a second one cannot be helped!  This bold tasting kiebasa ball game sandwich is bossy! 
     Kielbossy:     Heat a saute pan or griddle over medium low heat.     Add 1/2 tablespoon of vegetable oil.     Add either 1 whole 10" to 12" long kielbasa sausage or a 6" kielbasa that is cut in lengthwise.  The kielbasa should be longer than the sub sandwich roll.     Grill the kielbasa till it becomes hot, with a minimum of brown highlights.     Keep the kielbasa warm on a stove top.     Heat a saute pan over medium/medium low heat.     Add 1/2 tablespoon of vegetable oil.     Add 1 pat of unsalted butter.     Add 1 clove of chopped garlic.     Add 3 slices of onion that are 3/8" thick.     Add 8 to 10 thick green bell pepper strips.     Saute till the peppers and onions start to become tender.     Add 6 roasted red bell pepper strips.     Add sea salt and black pepper.     Saute till the vegetables become tender and till a few light brown highlights can be seen.     Remove the pan from the heat.        Split a 10" sub roll open.     Spread a thin layer of brinjal condiment on the sub roll.     Place the warm kielbasa on the sub roll.     Place the peppers and onions on the sub roll.     Sprinkle some grated emmentaler cheese (swiss cheese) over the sausage and peppers.     Place the sandwich on a baking pan.     Bake in a 350º oven, till the cheese melts and the sub roll becomes toasted.     Place the sandwich on a plate.     Garnish with an Italian parsley sprig.
     I have been known to post easy simple tasty recipes in this blog for folks who do not want to deal with complex recipes after a long day on the job or after having a few beers while watching a game..  This Kielbossy sandwich certainly does have a satisfying interesting flavor that kielbasa munching sports fans will like!  Yum!  ...  Shawna
